Nancy Green - 'Aunt Jemima'
Nancy Green created the Aunt Jemima at-home pancake recipe. She was born into slavery in Montgomery County, Kentucky. Green played the role of Aunt Jemima across the United States, based on the minstrel song "Old Aunt Jemima". This fictional character created by white salesmen was rooted from slavery, and connected white consumers' romanticized view of the 'Old South' with their easy to make pancakes. She was also associated with the "mammy" sterotype, which is a Black female housekeeper, devoted to her white enslavers, lovingly raising the white children while ignoring her own.

Dr. Susan La Flesche Picotte

Dr. Susan La Flesche Picotte was the first Native American to earn a medical degree. La Flesche attended the Woman's Medical College of Pennsylvania, where she graduated a year early at the top of her class. La Flesche served as the only doctor for 1,200 people on the Omaha reservation, doing housecalls at all hours and through all types of weather conditions. La Flesche was a vital player in gathering donations to build the first hospital on the reservation that was established without government funds.
